Morocco is one of the world’s largest sardine producers but almost entirely operates as a bulk export industry with no consumer-facing artisan brands. Flower is the exception that reaches premium tinned fish buyers in the West. It’s not artisan in the Portuguese or Spanish sense, but the spiced formula works and the price is accessible.
